Our Parmesan crusted zucchini bites are crunchy and savory, with a cheesy crust that contrasts with the sweet, fresh marinara dipping sauce. The result is a divine conglomeration of mediterranean flavors and a delicious appetizer for your New Years spread!

These zuchini bites can be served as a light and low carb side, appetizer or become a piece of your healthy meals strategy. They can even be made gluten free. Grilled Upside Down Puff Pastry

Upside down puff pastry went viral on tik tok this past year and are a simple yet delicious option for your new years table. When grilled, these social media darlings attain a crunch and depth of flavor unequaled in the oven. The original idea made with honey and nectarines was created by Lily Ghondrati. Since then, many have posted their own variations and it seems to me there are no limits. Our grilled version, if not the first, is quite unique when compared to the majority of videos all over social media.

If you haven’t seen these before, puff pastries are a scrumptious and versatile pastry made from dough you can purchase from the supermarket. The dough for puff pastries can be used for a variety of sweet and savory dishes. It is made by layering dough and butter, then rolling and folding it. The result is a dough that when cooked is loaded with air pockets that give puff pastries their airy and flaky texture. But how it’s made is irrelevant because it is so simple to purchase at the grocery. Just defrost, roll out and create a simply delectable side or treat.

Our Costco copycat tortellini salad transforms a rudimentary side dish into a plate filling side that goes with whatever protein you place on your plate. The balsamic vinegar adds a specialty Italian deli taste to the salad. The ingredients can be expanded to include peppers, kidney beans, pepperoni or grilled chicken for a heartier salad. Experiment with different dressings. Substitute Greek dressing and substitute feta cheese for the mozzerella to give the salad a Greek flair! This salad will be a colorful and delicious addition to your new years menu!

Thai salad with chicken and lime (Larb Gai)

Larb Gai or Thai salad with chicken and lime is a classic Thai dish that can be served as light dinner or salad making it a different dish to try fro your New Years celebration. The minced chicken salad with lime dressing combines a mix of classic Thai flavors; hot, sour, salty and sweet. The result is a unique sweet and sour sauce with a fantastic texture and some spice. The level of heat is left to the chef.  We like it hot and use 5 Thai chilis with a few shakes of habanero flakes.

Open Faced Sandwich with Kale and Caramelized Onions

Caramelized onions sautéed with garlic, kale and topped with pepper jack cheese makes a truly tasty vegetarian sandwich. Making this an open faced sandwich keeps the carbs low. Think of it as an adult grilled cheese! In this recipe, we have added rotisserie chicken. We have made it both ways and I can assure you, either way is delicious and a terrific add to your new years table!

Homemade Guacamole

Guacamole is used in so many ways and loved by so many! Made with avocado and a blend of a few high quality ingredients that you can find at any grocery store. When homemade, no preservatives are added. It’s just a delicious bowl of goodness to dip a chip in, add to a sandwich, in a burrito, spread on toast or wherever you decide. A fresh bowl of homemade guacamole at any gathering is usually always a big hit. Add this dip to your New York celebration.
