No, this recipe is simple and fast. You will find many recipes that can take hours or days to prepare before you get to make a pizza. For most of us that is a deal breaker and is why many will turn to store-bought dough. It just takes too much time. After reading this blog, you will be surprised at how simple pizza dough is to make. We hope it gets rid of any intimidation you may have had. How to make our 90 minute pizza dough

So many pizza lovers are intimidated and never try making homemade pizza. Our goal is the show how simple pizza dough is to make. The ingredients are just; water, bread flour, olive oil, sugar, salt and yeast. Start by measuring the liquids and placing them in the bread machine bucket. Add the salt and sugar. Now measure 4 cups of flour and place in the bread machine followed by the yeast. Place the bucket back into the bread machine, set to the dough setting and press start. That’s it, your dough will be ready in 90 minutes!

A more advanced pizza dough recipe

The above instructions will give you a solid pizza dough that is superior to store bought and will make most ecstatic forever. However if you want to up your dough game and improve the consistency, continue reading this section.

Measuring flour by volume is simple but will yield highly variable quantities of flour and inconsistent results. When measuring the flour, we recommend using a scale as used in bakeries and pizza shops. We use this food scale and it works great! After weighing and measuring each ingredient from the recipe below, simply place into the bread machine, set the machine to dough and press start. In 90 minutes you will open the bread machine and find a perfect ball of pizza dough. We have used an Oster machine with great results. If you require a stainless steel look the Cuisinart is a terrific choice.

Hydration and your pizza dough

What is hydration? This requires some basic math to explain, however if you hate math, skip these 2 paragraphs and simply follow our recipe. Hydration is simply it’s the amount of water compared to flour used to make your dough. Our basic dough recipe will yield a hydration of around 55 percent.

To calculate percent hydration simply divide the weight of the flour by the weight of the water in grams. If you weigh 1 1/2 cups of water, it’s 355 grams, 4 cups of flour will weigh approximately 650 grams. 355 divided by 650 gives us 55% hydration. We know many despise math, however with your phone it is quite easy to calculate. The best news, if you follow our recipe below, no math is necessary.

To create our 2.0 90 minute pizza dough it will be necessary to invest in a kitchen scale like the one above. Now instead of measuring your water and flour by volume ( ex. cups), you will weigh them. Our basic recipe uses simple even measurements to keep the recipe simple. The result is a good, solid and easy to make dough that is about 55% hydration. This dough recipe will yield a tasty and crunchy undercarriage to you homemade pizza. But to up your pizza game, you will have to up your hydration.

To increase you dough’s hydration , maintain the 650 grams of flour in the recipe, but you must increase the water. To get the dough to 60% hydration, use 380 grams of water. To increase your dough to 65% hydration, use 422 grams of water. We recommend starting at 60% hydration, then next time try 65 percent and determine what you prefer. Some may prefer the original recipe, some 60%, others 65%, it’s a personal choice. We have come to prefer the 65% hydration to make our Sicilian or grandma style pizza in a heavy square pan.

Now you can use your imagination to create your favorite pizza. Margherita, sausage and pepper, white, spinach, mushroom or any topping you desire! You are only limited by your imagination and what is in your pantry. While the dough is being made you can create whatever topping you choose. It is possible to create a pizza from scratch in 2 hours!

Another benefit to creating a fresh homemade pizza is that you control the ingredients. How many times have you had frozen or takeout pizza and had grease pour off the pizza into your plate? We call those dead calories. The oil added to frozen and takeout pizza is why pizza can be so unhealthy and high in calories. Your homemade pizza will never have excess oil and grease, unless that is what you want.

Ingredients

  • Simple Basic 90 minute pizza dough
  • 1 1/2 cups water

  • 1 tsp sugar

  • 2 tsp salt

  • 2 tbs olive oil

  • 4 cups bread flour

  • 1 package quick rise yeast

  • 60 percent hydration
  • 382 Grams water

  • 1 Tsp sugar

  • 2 Tsp salt

  • 3 Tbs olive oil

  • 650 Grams bread flour or type 0 flour

  • 1 Tsp diastatic malt powder

  • 1 Package quick rise yeast

  • 65 percent hydration

Directions

  • Place water, salt, sugar and olive oil into the bread machines bread pan.
  • Add bread flour and yeast. Select dough on bread machine and press start.
  • In 90 minutes your dough is ready!

Notes

  • For added flavor and texture make dough a few days ahead and leave covered in refrigerator. The day you plan to make pizza remove from refrigerator. Allow to reach room temperature and rise. Enjoy!
