This easy recipe combines juicy grilled chicken, fresh tomatoes, basil, and a drizzle of balsamic glaze. Serve it on toasted bread or with a side of pasta. Origins of Bruschetta

We all are familiar with the bruschetta appetizer found on most Italian restaurant menus. The dish dates back hundreds of years. Originally considered peasant food, the poor would top old stale bread with seasoned tomatoes which were abundant. Over time, the dish became more popular whereby fresh bread was brushed with garlic and oil, toasted and then topped with the tomato bruschetta.

The light and vibrant flavor of bruschetta makes it a perfect candidate to include as part of a healthy, modern Mediterranean diet. It remains a staple within Italian restaurants in its tradtional form served as an appetizer. Bruschetta also pairs perfectly with chicken to create a low fat, low carb, vibrant and colorful main dish. Bruschetta should be prepared with fresh in-season tomatoes. For best results, the dish should only be made with garden fresh produce or farm fresh tomatoes from a farmers market or local grocery stocking locally grown produce. It is often said that a healthy diet is comprised of colorful foods. Fresh bruschetta includes vibrant red, only present with fresh tomatoes, combined with bright green freshly picked basilico (basil). Fresh produce combined with high quality olive oil and balsamic vinegar is a template for many classic and healthy summer meals. Any fresh tomato can be used. We prefer San Marzano combined with sweet cherry or a meaty beefsteak tomato. We do not suggest making this dish using ”winter” or out of season tomatoes. In fact, we would not consider ordering this meal at a restaurant when tomatoes are out of season.

Making Chicken Bruschetta

The chicken that serves as the base for this recipe can be breaded and cooked in an air fryer or non stick skillet Grilled chicken also works well with this dish. We recommend marinading the chicken before breading or grilling. This step adds some flavor and keeps the chicken moist when cooking. While the chicken is marinading you can prepare the bruschetta to save time. When you are finished cutting the ingredients for the bruschetta, the marinade should be complete and you can proceed to cook the chicken.

Marinated chicken breasts layered with a blend of juicy tomatoes, garlic, red onion, fresh basil and mozzarella cheese. Yes please!

Ingredients

  • Ingredients for the Chicken
  • 3 chicken breasts halved horizontally

  • 1 bag shredded part-skim mozzarella cheese

  • Italian dressing for chicken marinade

  • Olive oil

  • 2 cups breadcrumbs

  • Ingredients for Bruschetta
  • 12 plum tomatoes chopped

  • 4 cloves garlic minced

  • 1/2 cup red onion diced

  • 10 fresh basil leaves cut or torn

  • 2 1/2 tbs olive oil

  • 2 tbs balsamic vinegar

  • Salt and pepper to taste

Directions

  • Pound chicken breast thin so all 6 fillets are of equal thickness. Place chicken in a medium bowl and marinade in enough Italian dressing to coat. Set aside. Marinade for at least 30 minutes.
  • Cut up all ingredients for the bruschetta and add to a medium bowl. Mix together.
  • Once chicken has marinated, bread each cutlet. No need to dredge in egg as using the Italian dressing keeps the chicken moist. This also helps save time!
  • Lightly drizzle a griddle or a non-stick frying pan and cook chicken about 3 minutes on each side or until chicken is browned and fully cooked.
  • Turn oven to broil. Place chicken in a casserole dish or leave in the pan if it is oven safe.
  • Top chicken with bruschetta mixture first, then mozzarella cheese. Place in oven just until the cheese melts. Keep a close eye on the chicken as broiler can brown very quickly.

Notes

  • Chicken can also be grilled and not breaded to further reduce the carbs. The flavor is all in the bruschetta and so, either way, this dish will still taste delicious.
  • You can use your favorite store bought breadcrumb, panko or homemade.
