Over the past few years we began to experiment with homemade pancakes and have had positive results. We found the fluffy texture of the homemade mix unmatched when compared to the boxed variety. The addition of pumpkin and pumpkin spice to the mix adds a whole new level of decadence.

How to make pumpkin pancakes

Making the dry mix for homemade pancakes only takes a few minutes. We recommend making double or triple the dry ingredients. Save the extra mix in a container for to use for a quick batch of homemade pancakes. When ready to use, just add the wet ingredients to the pre-made mix to create these pancakes in a jiffy. We will not classify this recipe to be a healthy meal, however pumpkin is listed as a superfood. Any way to add a superfood to our diet is a positive dietary accomplishment. Incorporating pumpkin is a good thing, while also turning a plain breakfast staple into an autumn treat!

A decadent pancake perfect for pumpkin spice season!

Ingredients

  • Dry Ingredients:

  • 2 cups All-purpose flour

  • 2 tsp baking powder

  • 1 tsp baking soda

  • 1 1/2 tsp cinnamon

  • 1/4 tsp nutmeg

  • 3/4 tsp ginger

  • 1/4 tsp allspice

  • 1/4 cup brown sugar

  • Wet Ingredients:

  • 1 1/2 Cups milk

  • 1 egg

  • 2 Tbs unsalted butter

  • 1 cup pumpkin puree

Directions

  • Mix together the wet ingredients in a bowl, combining the milk, eggs, melted butter and pumpkin purée.
  • In a separate bowl combine the dry ingredients mixing the flour, brown sugar, baking powder, baking soda pumpkin spice mix and salt.
  • Combine the wet and dry ingredients. Mix until just combined, do not over-mix as this will make pancakes extremely dense.
  • Preheat griddle over medium high heat. All stoves are different so you will have to figure out the correct stove setting. Pour about 1/3 cup of the batter onto the griddle.
  • The pancakes are ready to be flipped when they begin to bubble, and the bubbles turn to holes. Flip and cook until lightly browned. Serve with your choice of toppings.

Notes

  • You can make extra dry ingredients that can be used in the future. Use about 2 1/3 cups of the dry ingredients and add to wet ingredients. If the batter is a bit thick you can add a little bit more milk until consistency is correct.
  • You can top the pumpkin pancakes with berries and confectioners sugar or maple syrup, butter and walnuts. For a truly decadent breakfast, top with a dollop of whipped cream.
