Most Italian recipes we are all familiar with are smothered in tomato sauce. Our scarpariello recipe is unique, being devoid of tomato sauce but loaded with flavor including sausage, garlic, Italian spices and seasoning.

Where did Chicken Scarpariello originate?

The origins of the dish are unclear. The name translates to “shoemakers chicken” hinting at its blue collar ancestry. After researching the dish it is clear that many have an opinion, but it’s true lineage remains vague. Scarpariello is likely a conglomeration of Italian “peasant food” originating in southern Italy that was Americanized by immigrants in the early 20th century. The white wine sauce and potatoes add a distinctive northern Italian flair to this simple and hearty meal.

Its vague origins yield a multitude of variations to the dish. Some include tomatoes, lemon or olives. Our chicken scarpariello recipe is devoid of tomatoes. The hearty and complex flavor comes from the white wine sauce that is loaded with Italian seasonings, garlic and sausage and thickened by the inclusion of potatoes.

How do I make Chicken Scarpariello?

Simple and Luxurious Chicken Scarapiello

This dish might seem simple, but its flavors are extraordinary. Let’s get started!

Prep the Potatoes

  • Microwave potatoes until tender. Set aside.

Cook the Proteins

  • Heat olive oil in a skillet. Brown chicken, but don’t overcook. Remove from pan.
  • In the same skillet, brown sausage. Remove from pan.

Sauté the Veggies

  • Add more olive oil to the skillet. Sauté onions and peppers until softened.
  • Stir in garlic until fragrant.

Combine and Simmer

  • Return chicken and sausage to the skillet. Add cooked potatoes and toss to combine.
  • Season with your favorite herbs and spices. Deglaze the pan with wine.
  • Let simmer for 5-10 minutes, allowing the sauce to thicken.

What would I Serve with Chicken Scarapiello?

Our version is hearty enough to be served as a one pot meal. The white wine sauce also lends itself to be served over pasta. We prefer it as a one pot meal served with crusty Italian bread and a nice big salad. The recipe can be modified by using pork sausage instead of turkey or substituting spicy or brined peppers. A classic Italian-American dish made with a mix of chicken, sausage and potatoes packed with big flavor and all done in one pot.

Ingredients

  • 2 tsp olive oil

  • 12 cloves (or to taste) of garlic peeled and cut in half

  • 2 large boneless chicken breast cut into bite-size pieces

  • 2 large russet potato

  • 1 onion chopped

  • 1 red pepper, chopped

  • 3 links of turkey sausage sliced

  • 1/2 cup white wine

  • 1/2 tsp each of black pepper, parsley, basil, oregano and thyme

  • 2 -3 oz pitted black olives

Directions

  • Poke a few holes in the potato and microwave on high until cooked. Let cool before peeling and cutting into bite-size chunks. Set aside.
  • Heat oil in pan over medium heat. Add chicken and cook until browned but not cooked all the way. Remove and set aside.
  • Add sliced sausage and cook until browned. Remove and set aside.
  • Drizzle and heat olive oil in pan. Add onions and peppers and sauté for 1 minute before adding the garlic. Sauté for another minute or until onions become translucent.
  • Add the chicken and sausage back to the pot along with the cooked, cut up potato.
  • Add the black pepper, basil, oregano, thyme and black olives. Stir to combine. Add the white wine. Cook for another 5-10 minutes or until the wine is slightly reduced.

Notes

  • Sweet or hot Italian sausage is what you would normally find in many recipes. If you are looking for a healthier version, using turkey sausage works great.
  • This can be served alone or over pasta or rice.
  • You can combine half of a green and half of a red pepper. Like it spicy, add in your favorite hot pepper. Marinated banana or pepperoncini peppers are also a good modification.
