A Tex Mex chicken and vegetable one pot meal on the table in about 30 minutes. This is a perfect way to use up some of those Summer-time garden fresh vegetables. Place over rice, create a delicious burrito bowl or use to make nachos! Whichever way you decide, I can assure you, it will be delicious.

Tex Mex chicken and vegetables is a healthy, fast and delicious meal that is loaded with southwestern flavors and color. Made with zucchini, peppers, cherry tomatoes, corn and black beans it’s a perfect way to use up some of your garden fresh vegetables! The dish can be made in a skillet, crockpot or baked as a casserole. Make a rice bowl and add fresh guac, lettuce and cheese. You can even top off your bowl with some crushed nachos. Use it as a dip. Roll it into a burrito or over spaghetti. Use your imagination and have fun with this dish.

Zucchini, or any of your favorite soft squash varieties go extremely well with this recipe. Simply quarter and slice about 1/4 inch thick. Too thin and the zucchini will disintegrate, too thick and it will remain hard as the dish cooks quickly.

Absolutely! A casserole has 4 main components; a protein, vegetables, sauce and cheese. This dish checks all boxes. If you prefer to bake the dish as a casserole simply brown the chicken then add all ingredients except for the cheese to a casserole dish and bake for 30 to 40 minutes. Cheese should be added at the end and cooked just until cheese melts.

Can I make Tex Mex chicken in a crockpot?

Absolutely! This method will take the most time but if you have some errands to run, place all the ingredients except the cheese in a crockpot and cook for 3 to 4 hours. Top with cheese at the end. Cover and cook just until cheese melts.

How can I serve Tex Mex chicken?

Serve in a bowl over rice. Top with cheese and your choice of toppings. These can include guacamole, salsa, hot sauce, chopped red onion and jalapeños, pickled pepper,lime or anything you desire. Lay a base of salad greens, grape tomatoes and red onion then top with our Tex Mex chicken and vegetables.

Walking tacos?

We have never tried this method but have noticed it trending on google. This recipe can be made into a walking taco or Tex Mex dish. Simply prepare this recipe unchanged, then empty a bag of Fritos, or preferably a healthier baked chip. Cut bag in half and place a decent serving of Tex Mex chicken into each half bag. Top with Fritos or healthy chips. In our opinion, serving these in a paper or disposable bowl is a much better option, however, who are we to judge. As we said before, have fun with it! We just want everyone to enjoy their food!

How do I prepare Tex Mex chicken and vegetables recipe?

The simplicity of this dish is one of its virtues. Combining its ease of preparation, a classic southwestern flavor and healthy attributes, this dish will become a kitchen staple.

To prepare for a skillet, simply cut the chicken and brown in a hot pan. While browning chicken, cut up the vegetables. Remove chicken when browned and sauté vegetables quickly. Return chicken to pan, add corn, tomatoes, black beans and seasoning. When well combined and vegetables soften, top with cheese and cover. Once cheese is melted serve in your preferred manner.

If you prefer a baked casserole or crockpot, the preparation remains the same, however, you must adjust your cooking method. For a casserole add everything to a casserole dish and bake at 375F for 30-40 minutes or until done. Cover with cheese and broil until cheese melts.

For a crockpot, prepare the same and add all ingredients to crockpot. Cook on high 3-4 hours or until done. When you serve, top with cheese.

The vegetables and cheese used can be modified to whatever you like or prefer. Substituting a poblano pepper for the sweet green peppers will give the dish a magnificent earthy and complex flavor. You can also change the dish up a bit by using ground turkey or ground chicken. What we present in our recipe has worked best for us. Let us know how you have modified the recipe and how it came out. A delicious Tex-Mex one pot meal filled with summer-time vegetables, black beans and melted cheese.

Ingredients

  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces

  • 2 medium zucchini diced

  • 1 medium onion finely chopped

  • 2 medium bell peppers diced ( I like to use 1 green and 1 other color)

  • 2 large garlic cloves minced

  • 4.5 oz can diced green chiles or 1 jalapeño seeded and diced

  • 1 cup frozen corn

  • 15.5 oz can black beans

  • 14.5 oz can diced tomatoes or 1 1/2 cups of sliced cherry tomatoes

  • 1 1/2 Tbs chili powder

  • 1 tsp cumin

  • 1 cup shredded cheddar

  • 1/2 cup chopped cilantro

  • 1/3 cup green onions chopped

  • salt, pepper to taste

Directions

  • Add a drizzle of avocado oil to a large skillet on high heat. Toss the bite-sized chicken into pan and sprinkle with 1/2 tsp each cumin, salt and pepper. Cook until lightly browned. Remove from pan.
  • Turn skillet to medium and drizzle a coating of avocado oil. Add onion and bell peppers and cook for 1 minute before adding zucchini. Cook for another 2-3 minutes. Add garlic. Sauté until fragrant.
  • Add can of chiles or diced jalapeño, corn, drained and rinsed black beans, diced tomatoes, chili powder, 1/2 tsp cumin, cilantro, salt and pepper to taste. Add the chicken back to the skillet. Stir to combine. Half cover the skillet and let this cook for another 8 minutes.
  • Remove cover. On low-medium, add cheese. Top with green onions. Cover until cheese has melted.
