Rotisserie chicken fajitas are a classic Tex-Mex dish made with sliced and seasoned chicken, grilled peppers and onions, served on warm tortillas. They are a healthy, delicious and fun meal everyone will love making. Perfect for a casual meal with friends, family or a cinco de mayo party. Who doesn’t love the sizzling sounds and smells of cast iron fajitas making their way to your table at your favorite Mexican restaurant? Our recipe utilizes seasoned rotisserie chicken to simplify the dish permitting you to easily recreate that delicious ambiance in your home.




What is the origins of fajitas?

The dish is classic Tex Mex cuisine and appears to have originated in the Rio Grande Valley of South Texas and northern Mexico. In the early 1900s, cowboys would often be fed with what were considered to be the “throw away” pieces of the cattle. This included tough cuts of meat such as skirt steak. To make this meat more tender and flavorful, the meat would be marinated in a mixture of spices and grilled over an open flame. The Spanish word “faja” means belt or strip, hence the origin of the name fajitas.

Fajitas became popular in restaurants during the 1970’s. With their increased popularity came modifications to the traditional dish, whereby skirt steak was replaced with chicken, seafood and shrimp.

How to marinade chicken fajitas?

Marinating the chicken is an integral step in making fajitas. If you skip the marinade, your fajitas will be tasteless and not tender. Fortunately, it is easy to marinade chicken for fajitas. Simply cut up the rotisserie or raw chicken and place in a large bowl. Season with typical Tex Mex seasonings; chili powder, cumin, oregano and cilantro. Then prepare a basic marinade consisting of salsa, lime juice and Worcestershire sauce. Combine and mix with the chicken. Let it marinade for at least an hour, but preferably all day.

Chicken fajitas can be one of the healthiest options for Mexican food. They are not fried nor do they include any fatty proteins. The tortillas include carbs, so if this is a concern a healthier option to consider would be corn tortillas or low carb flour tortillas. Lastly, using raw chicken in place of rotisserie will eliminate the salt, additives and additional calories added to the rotisserie chicken. This is mostly relevant to those who are sensitive to food additives or are counting daily calories. You must also watch the toppings. Adding a ton of sour cream to your fajita will adversely impact the dish’s health profile by adding significant fat and calories.

We recommend these precooked birds because they are quick, moist and delicious. The negative is the added salt, sugar, additives and fat. Overall, a rotisserie chicken is a healthy choice for an inexpensive and healthy meal. We use them all the time but bring up these details to fully inform our readers.

Are chicken fajitas low carb?

Yes these are low carb. Use corn tortillas or low carb tortillas to further lower the carbs.

Can I cook fajitas in a crockpot?

Fajitas are best when cooked quickly over a hot flame. We recommend preparing on a griddle on your grill or a hot cast iron pan on the stove. You cannot obtain char on your meat or vegetables in a crockpot. If you love your crockpot and want to give it a try, follow our recipe and place all ingredients into the crockpot and cook on high for about 3 hours or until the chicken is cooked.

Can I cook fajitas in the oven or air fryer?

In your oven we recommend cooking on a sheet pan at 450F. Follow our recipe, place on sheet pan and cook in the oven for about 15 minutes, flipping the meat and vegetables once.

Cooking them in your air fryer will also work. The challenge is the size of the air fryer as the fajitas require a large surface area to properly cook. You can prepare them in two batches but then you lose that fresh sizzle we love when they just come off the fire.

Can I cook chicken fajitas on the grill or a blackstone?

This is our recommended method of cooking this dish. Cook them on a Blackstone or utilize a griddle on a traditional grill. Cook on medium high to high to get a nice char and some of the barbecue flavor that you can’t replicate in the kitchen. Fajitas are a perfect match for a blackstone grill.

Are fajitas and rice a good combination for dinner?

That is the classic combination. Make them with Spanish rice or white rice and beans for an authentic Tex Mex meal! These fajitas can be paired with most Mexican dishes. This can include tacos, burritos, quesadillas or stuffed poblanos. Options for sides include a spicy onion quiche, cornbread, nachos with spicy bean dip, soup or a salad.

Can I make fajitas with pasta?

This is not authentic but will work. Simply substitute the tortilla for some fresh pasta and when the fajitas are ready mix them with the cooked pasta. Top with cheese, pico de gallo and our homemade guacamole.

Can I make a fajita quesadilla?

This can be done but with a bit more effort. Once the fajita mixture is cooked, they must cool. Once no longer sizzling hot, assemble the quesadilla by covering a tortilla with cheese, a layer of the fajita filling, cover with cheese and another tortilla. Cook both sides on a griddle until warmed through and tortillas are browned. Top with traditional fajita toppings.

How do I cook this fajita recipe?

As summarized above, fajitas are fun and simple to prepare. We normally start with a rotisserie chicken that we remove from the bone and cut into small bite-sized pieces. You can also start with raw chicken if preferred. The chicken is placed into a large bowl and covered with Tex Mex seasonings. This includes chili powder, cumin, oregano and cilantro. Mix well. Then add salsa, Worcestershire sauce and lime juice. Mix well. Let this sit for at least an hour. A few hours is preferable.

While marinating cut up the peppers and onions. To cook, place a griddle on your grill or a cast iron skillet on your stove top. Get the griddle or skillet hot and coat with oil. Cook peppers and onions til charred, but not soft. Remove. Place marinated chicken on the hot griddle or skillet and cook at high temperature. If using raw chicken be certain chicken is cooked through. Combine with peppers and serve.

Be certain to quickly heat the tortillas either on your grill or on a gas stove. They should begin to char but don’t let them get crunchy. This will improve their flavor. This should be done before cooking the chicken if you are cooking solo, but if you have some help this can be done while cooking the fajitas.

Place tortillas and fajitas on table and let your guests prepare their own. Homemade chicken fajitas in 20 minutes.

Ingredients

  • 1 Rotisserie chicken removed from bone and cut into strips of bite sized pieces OR

  • 4 Chicken breasts cut into strips ( if not using rotisserie chicken)

  • 1 Green and red pepper cut into bite sized pieces

  • 1 Medium Onion, sliced

  • 2 Cloves Garlic, minced

  • 12 Corn or flour tortillas, fajita sized

  • Marinade
  • 2 Tbs Chili powder

  • 1 Tsp Cumin

  • 1 Tbs Oregano

  • 1/4 Cup Cilantro, chopped

  • 1 Cup Salsa

  • 1 Tbs Worcestershire sauce

  • 1 Lime, juiced

Directions

  • Cut up the rotisserie or raw chicken into bite sized strips. Place in a large bowl.
  • Add chili powder, cumin, oregano and cilantro to chicken. Mix well. Add salsa, Worcestershire and lime juice to chicken. Set aside for at least an hour, preferably 3-4 hours.
  • While chicken marinates, cut up peppers, onions and garlic. Set aside.
  • Fire up outdoor griddle or cast iron skillet on stove. Add some oil. Once hot, cook vegetables. They should have some char but do not allow them to get mushy. Remove and set aside.
  • While cooking , have someone warm tortillas on grill or stove. They should start to brown but don’t let them burn! When done, remove and cover. If you don’t have assistance, get tortillas ready before you cook the fajitas.
  • Let surface get hot and add marinated chicken. Cook turning constantly. If raw, cook through. If rotisserie, cook until warmed up. Add peppers and onions. Combine well.
  • Remove from grill or stove and bring to table while sizzling. Serve and assemble with pico de gallo, sour cream, chopped tomato, lettuce, Mexican cheese and guacamole.

  • Consider substituting 2 poblano peppers for the sweet green pepper for added flavor and a low level of spice.
