Cornbread loaded with taco meat and your favorite toppings. A quick, easy and delicious entree and a perfect meal for your next game day feast!

Ingredients

  • Cornbread
  • 1 Loaf Store bought cornbread, or

  • 1 Loaf Our cornbread recipe.

  • Taco meat
  • 1 Our crockpot Mexican chicken, or

  • 1 Pound Ground meat (turkey, chicken or beef)

  • 1 Onion, sliced

  • 1 Clove Garlic, minced

  • 1 Jalapeño, or chili pepper of choice seeded and sliced

  • 1/2 Cup salsa

  • 1.5 Tbs Chili powder

  • 1 Tsp cumin

  • 1 Tbs oregano

  • 1/4 Cup Fresh cilantro, chopped

  • 1 Tbs Avocado oil

  • Toppings
  • 1 Cup Cheddar cheese

  • 1 Avocado, sliced

  • 1 Cup Salsa

  • 1 Cup Crushed tortilla chips

Directions

  • If using Costco or store bought cornbread, slice the loaf into 1 inch thick slices. If cornbread is in a square, slice into 4×4 inch squares. If making our homemade cornbread using a cast iron skillet, please follow the recipe above. Make ahead of time to keep this recipe quick and easy.
  • If making our homemade crockpot Mexican chicken, follow the recipe above. Make ahead of time to keep this recipe quick and easy. If making taco meat with ground meat, chop all vegetables as described above. While chopping vegetables, brown the ground meat. When meat is mostly cooked, drain excess fat and place meat in a bowl.
  • Place vegetables in pan to soften. When soft, add cooked ground meat. Add salsa and seasonings. Cook until flavors are well blended and remove from heat.
  • Heat griddle to medium heat with oil. Place cornbread on the griddle. If using square pieces, place top side down onto griddle. When cornbread begins to brown, lower heat to low and flip cornbread. Place cheese, taco meat, more cheese then salsa on cornbread and close lid or cover. When heated and cheese is melted remove from heat. Top with avocado, more salsa, crushed tortilla chips or your favorite toppings.
