Where did beef on a weck originate?

I was introduced to beef on a weck while visiting family attending college. It appears this amazing sandwich was invented in Buffalo during the late 19th century.

What is beef on a weck?

This is an amazingly simple yet delicious sandwich made with roast beef and horseradish on kummmelweck roll. The traditional weck is topped with caroway seeds and course salt.

Unfortunatley most of America has never heard of this local gem. Simple and full of flavor, we hope to introduce this regional sandwich to all. The traditional roll may be difficult to find outside of Western New York. The traditional bread is recommended, and if your favorite bakery doesn’t sell them perhaps ask if they could make them for you. If you can’t find them, we provide an option to make the sandwich with Hawaiian rolls.

How do I make a beef on a weck?

This version turns this sandwich into a terrific appetizer or gameday treat. To make this sandwich:

  • Lather some of the prepared horseradish mayonnaise onto the rolls
  • Fill the roll with a generous portion of the beef.
  • Begin warming the gravy (optional)
  • If using a traditional kummelweck roll, close the roll and place into preheated 400F oven. If you can’t locate these tolls and are using a Kaiser or Hawwian roll coat the top of the rolls with butter then sprinkle with salt, caraway seeds and sesame seeds. Close roll and place into preheated 400F oven.
  • Bake for 5-10 minutes.

These can be prepared in 15 minutes. Not many foods are so simple. When made with King Hawaiian rolls, your guests can grab a small handheld portion of this delicious sandwich in minutes. Serve with a side of brown gravy for a bonus!

Whichever bread you use, the result will be a spectacular sandwich. How these simple to prepare sandwiches remain only a regional favorite is perplexing. The classic Western New York sandwich.

Ingredients

  • 6 Kummelweck rolls or

  • If you can’t find kummelweck rolls:
  • 1 Package Hawaiian rolls

  • 1/8 Cup Caraway seeds. You will have extra.

  • 3 Tbs Course or kosher salt

  • 2 Tbs melted butter

  • Filling of sandwich
  • 1 Pound roast beef thinly sliced

  • 3-5 Oz horseradish

  • 1/4 cup mayonnaise

  • 12 Oz Au jus gravy for dipping

Directions

  • Preheat oven to 400 degrees. If you can’t find kummelweck rolls, substitute with Hawaiian rolls.
  • Combine the horseradish with the mayonnaise. Amount of horseradish depends on the amount of tang you desire. A classic beef on a weck has a strong tang of horseradish.
  • Spread horseradish on the bottom of the weck or Hawaiian rolls.
  • Add the roast beef. Put the tops of the rolls on.
  • If using Hawaiian rolls or unseeeded Kaiser or similar rolls, brush the top of rolls with melted butter then sprinkle with caraway seeds and salt.
  • Warm the Au Jus gravy. This will be used as a dipping sauce. Place the sandwiches in a 400 degree oven for 5 minutes until bread is heated. Thats it! Dip and enjoy.
