To create the dish, you start with the shredded crockpot Mexican chicken. Then, soften a large flour tortilla on a griddle or in a microwave. We suggest on a griddle for additional flavor. Once the tortilla is ready, place your favorite Mexican cheese at the base, covering less than half the radius of the tortilla. Cheddar or Mexican are most common but feel free to experiment. Other options include manchego, Oaxaca and queso fresco. Cover the cheese with the Mexican chicken, then add any other fillings desired. This can include salsa, black beans, refried beans or peppers and onions. Be generous but also understand that you will have to flip what you create.
Cover the filling with additional cheese then fold over the other half of the tortilla. Press edges and place on grill or skillet. Heat griddle so that the inside is well heated before the tortilla begins to burn. Once browned, carefully flip and cook until cheese is melted and both sides are brown. Top the chicken quesadilla with your choice of salsa (Rosa or verde), guacamole, hot sauce and cilantro. Many use a knife and fork but we suggest eating it like a sandwich.
