Chicken tacos made from our crockpot Mexican chicken recipe are a simple and delicious way to celebrate Cinco de Mayo or any taco Tuesday.

Who doesnt love a good taco? We all have our preference, beef, chicken, hard or soft shell, red or green salsa, cheddar or Oaxaca cheese, tomatoes or pico de gallo. There is a reason Tuesday was deemed taco Tuesday and that Ortega and El Paso are kitchen staples.

Each of those brands will produce a good taco (our friends from Mexico or Americas southwest may argue that point). But what if you want a better, more authentic taco? That will take a bit more effort than paying 99 cents for a packaged seasoning packet. Really good Mexican food starts with the meat and our crockpot mexican chicken is worth the effort. This recipe will yield juicy shredded chicken that is loaded with flavor and is a perfect addition to your healthy weeknight meals. The larger the variety in the peppers you select and include in the crockpot, the more flavorful the Mexican chicken will be.

Create chicken tacos in minutes when made with our crockpot Mexican chicken.

Ingredients

  • 1 qt Crockpot mexican chicken

  • 1 Package Hard or soft taco shells

  • 6 Oz Salsa

  • 2 Cups Shredded lettuce

  • 1 Cup pico de gallo or chopped tomatoes

  • 6 Oz Shredded cheddar or Mexican cheese

Directions

  • If using leftover crockpot mexican chicken warm up chicken. If using freshly made crockpot mexican chicken this step is unnecessary.
  • Warm hard tacos in oven as per package directions. If using soft taco tortillas, warm in microwave or on skillet until they begin to brown.
  • Salsa, pico and cheese can be store bought. Shred lettuce. Place all on table.
  • Begin constructing tacos. Place cheese on bottom, then crockpot mexican chicken, a bit more cheese, salsa, pico then shredded lettuce.
