A citrusy infused pork loin loaded with caribbean spices.

Ingredients

  • 6 Pound pork loin

  • 8 Cloves garlic chopped into large pieces

  • 6 bay leaves, cut into half to one inch pieces

  • 2 Tbs anise

  • 2 Tbs coriander

  • 2 Tbs cumin

  • 3 limes, zested

  • 4 Tbs Montreal seasoning

  • 1/2 Cup cilantro, chopped

  • olive oil, to coat

Directions

  • the day before, cut slits into the pork loin and place garlic and bay leaf into each slit.
  • combine the spices. Coat the pork loin with olive oil. Rub the spices onto the pork loin to cover the entire loin. Place in a baking sheet or roasting pan. Cover and place in refrigerator overnight.
  • take loin our of refrigerator and preheat over to 450F. The loin will require 8-10 minutes per pound to cook. The center temperature should be 145F when removed from cooking.
