Regional Recipes for AFC Championship Game: Buffalo Bills versus the Kansas City Chiefs
The AFC Championship is set with the two best teams from this conference! It’s down to two titans: Josh Allen and the Buffalo Bills, or Patrick Mahomes and the Kansas City Chiefs. Let us at @thefiftiesfightclub guide you through a gameday culinary journey, selecting a few amazing regional dishes that represent each city for you to try at home!
Buffalo: There is one food that Buffalo is more famous for than “wide right” and that’s Buffalo wings. Wings are traditionally fried than coated in sauce. For a lighter and tastier feel we like to grill our wings to a crispy and Smokey statement then douse them in our homemade sauce. You won’t miss the fryer!
Our second Western New York entry, is Beef on a Weck. With family that had attended UB we know the culinary scene from the city quite well. This sandwich may be our favorite Buffalo dish. Our version skips the kummelweck roll and transforms the Hawaiian roll into the kummelweck, turning this iconic sandwich into a slider. The spicier the horseradish the better. Check out the recipe below.
Kansas City: Start off with chili cheddar nachos using our chili recipe from the link below with a slight change. Substitute the beef in our recipe for pork and make it Kansas City style. Layer the nachos with the chili and cheddar for a pile of chips fit for a Chief!
Instead of heating in an oven, try using an air fryer! Layer the ingredients as described above in the air fryers bucket. When done, remove and turn bucket upside down and empty onto a plate. Bonus tip, at the bottom of the plate start with a dollop of soft cheese or crema. By doing this, you guarantee a supply of molten cheese when the pile of nachos gets to the bottom of the plate.
As a second, we recommend Kansas City style burnt ends. At this time, we don’t possess a recipe for this classic midwestern dish that we are comfortable sharing, however, we have used this simple recipe from Weber grills in the past with success.
Smoked Brisket, when made at home, can be amazing. However, be prepared to accept a 12-15 hour smoke time depending on the size of your brisket and the temperature of your smoker. Check out some solid choices below for grills to cook your burnt ends!

Regional Recipes for NFC Championship Game: Washington Commanders versus Philadelphia Eagles
The NFC Championship features a thrilling matchup between the rising star rookie quarterback, Jayden Daniels, and the Washington Commanders, and the formidable Philadelphia Eagles, led by the dynamic running back, Saquon Barkley. We hope you enjoy the delectable recipes below, each carefully selected to represent the unique culinary traditions of both cities.
Washington DC: The Commanders, formerly the Redskins, have not been to this game in a long time, January 1992 to be exact. Gridiron grub from the home of our government is quite simple and satisfying. Start off with a chili dog made with our bean and beef braised chili on top of a hot dog then topped with diced onions and shredded cheddar cheese. For a lighter version, try topping with our chicken chili. Be certain to have plenty of napkins on hand.
The second recipe from Washington, is a staple at most sports bars in this city, the smash burger. We’re putting a flavorful twist on the classic with our recipe featuring juicy turkey burgers seasoned with horseradish and Nashville hot seasoning. This sandwich is as powerful as Diesel blasting through defensive lines! To be clear, these aren’t your typical bland turkey burgers – they’re packed with flavor and texture, sure to impress even the most discerning burger enthusiasts.”
Philadelphia: Everybody thinks Philly cheesesteak when they think of Philadelphia football food, but for our featured Philly recipe we took a different path and went with a Stromboli. Pizza rolls can be filled with Italian meats such as pepperoni, salami, ham capicola and provolone. An alternative option is our Stromboli stuffed with sausage, your choice of spinach or broccoli and capped off with mozzarella and pecorino Romano. If you prefer meat, simply replace the filling in our recipe with your favorite Italian meats and some provolone.

For our second, of course we went with Philly cheesesteak sandwich. To make this sandwich more football foodie ready, we recommend substituting slider rolls for hoagie rolls.
We don’t offer a recipe on our blog yet for this sandwich. However, this iconic sandwich is simple to make. You will need a sweet onion cut in half and sliced, a red and green pepper, a ribeye steak chopped into small pieces, seasoned salt to taste, 1 tsp garlic powder, 1/2 tsp black pepper, Hawaiian rolls, butter and sliced provolone or American cheese. Cook the veggies until soft and remove from pan. Cook steak until no longer pink. Add seasoning and combine with veggies. Slice open and butter the Hawaiian rolls then brown. Add a healthy amount of the meat and veggies, top with provolone or American cheese (your preference). Cook until cheese is melted. Cover with the top of rolls. Touchdown!
