Upside down puff pastry is a TikTok trend that has gone viral and I can see why! We made 3 different versions with one significant change. Ours is cooked on the grill for a unique summery and scrumptious pastry! We made one with sautéed mushrooms, onion, tomato and ricotta, another without the mushrooms. The last one was made with hot honey, jalapeño and onion for a fiery and sweet treat. Give them a try! You will be pleasantly surprised at how easy and delicious they are.

Upside down puff pastry are viral on tik tok, but, when grilled, these social media darlings attain a crunch and depth of flavor unequaled in the oven. The original idea made with honey and nectarines was created by Lily Ghondrati. Since then, many have posted their own variations and it seems to me there are no limits. Our grilled version, if not the first, is quite unique when compared to the majority of videos all over social media.

What are puff pastries?

If you haven’t seen these before, puff pastries are a scrumptious and versatile pastry made from dough you can purchase from the supermarket. The dough for puff pastries can be used for a variety of sweet and savory dishes. It is made by layering dough and butter, then rolling and folding it. The result is a dough that when cooked is loaded with air pockets that give puff pastries their airy and flaky texture. But how it’s made is irrelevant because it is so simple to purchase at the grocery. Just defrost, roll out and create a simply delectable side or treat.

This dough can be used to create a multitude of creations that are easy to make and delicious. We used mushrooms, tomato and garlic with ricotta coating the dough to create two of our recipes. The third uses hot honey, onions and jalapeños to create a sweet and spicy pastry that will complement anything created on the grill. Simply place your ingredients on parchment paper and cover with dough. The traditional manner of preparing them is in the oven. However, if you are adventurous and possess a griddle for your grill, give our grilled version a try this Summer. This version is certain to impress all at your BBQ or cookout.

When should I thaw Puff Pastry Dough before use?

This dough is purchased from your local grocery and stored frozen. It must be thawed before use so the dough becomes workable. The day before you plan to use the dough, thaw overnight in the refrigerator or remove from freezer about 2 hours before you plan to use it. Do not try unrolling it if frozen as it will crack.

If using the overnight method, be sure to remove it from the refrigerator at least 30 minutes before using it as this allows the dough enough time to come to room temperature. Also, do not allow it to get too warm as it then becomes a bit too soft to handle. If you are thawing it the same day, be sure to cover it with plastic wrap to prevent it from drying out.

The dough must be at room temperature to possess the correct texture to work with. If you are short on time, you can thaw puff pastry dough in the microwave. Please be careful not to overcook it or you will create a mess. We don’t recommended the microwave method unless it is a last resort. But, what if I don’t use all of the pastry dough?

Can Puff Pastry Dough Be Refrozen?

Yes, the dough can be refrozen. If you are refreezing leftover dough,be sure to wrap it tightly in plastic wrap and then place it in a freezer bag. The pastry will keep in the freezer for up to 3 months. However, we have heard, but can’t confirm, that the dough will not be as flaky after it has been refrozen.

Is Puff Pastry Gluten Free?

No, this dough is not gluten free. Gluten is a protein found in wheat, rye, and barley. The dough used to make puff pastries is made with all-purpose flour, which contains gluten. However, there are gluten-free options available on the market. Another option is to make the gluten free option yourself. Recipes could be found online.

I don’t need to go to the grocery as I have a pre made pie crust home. Can I substitute the pie crust to make puff pastries?

Are Puff Pastry Dough and Pie Crust the Same Thing?

No, the dough to make puff pastries and pie crust may be similar but are distinctively different. The important difference is that the dough for puff pastries is made with butter, while pie crust is made with shortening or a combination of butter and shortening. This difference gives puff pastries their distinctive flaky texture and pie crust a more tender texture. That is why this dough is an excellent choice for recipes such as grilled puff pastries and pie crust perfect for pies and other baked goods such as quiche.

Ok, so pie pastry won’t work with this recipe, but how about phyllo dough?

What is the Difference Between Puff Pastry and Phyllo Dough?

The dough for puff pastries and phyllo dough both produce a flaky texture. However, they are made with different ingredients and have different characteristics. As noted above, the dough for puff pastries is made with butter. Phyllo dough is made with water having almost no fat. The butter makes the dough for puff pastries thicker and more “dough like.” Its airy and distinctive flaky texture makes it a perfect choice for puff pastries. The water makes the phyllo dough much thinner, almost like paper. In fact, phyllo dough is sold in paper thin sheets often combined when used. The result is a more delicate and layered texture.

Are puff pastries healthy?

The pastry dough is made with butter, so each puff pastry includes quite a bit of fat and calories. These are delectable, but not one of our healthier recipes.

Would puff pastries make a good breakfast?

Puff pastries would serve as an amazing breakfast. Stuff them with eggs, bacon, sausage, fruits or any omelette filling!

Make the pastries with sweetened apples, peaches, berries or anything your imagination desires. Yes, these can make a great dessert.

How do I make this puff pastry recipe?

Preparing the puff pastry.

Defrost and bring the dough to room temperature. Cut up the mushrooms and cook quickly on the stove to soften. Cut up remaining ingredients, the tomatoes, onion, garlic and jalapeños. Line your griddle or oven pan with parchment paper. Preheat grill or oven. Grill should be set to low where your pastries will be placed and high in the area of the grill that will remain empty. Temperature should be 375F.

Place oil or hot honey on the paper where pastries will be constructed. Place mushroom, tomatoes, onions over the olive oil and jalapeño and onion over the hot honey. Roll out dough and coat with ricotta. Cover the mushroom and the tomato and onion with the prepared dough. Cover the jalapeño pastries with plain dough ( no ricotta). Pinch edges of dough with fingers or a fork to seal. Place pastries in oven or on grill where setting is low. Cook until golden brown. Place jalapeño puff pastries on the coolest area of grill as the sugar can easily burn. When done, carefully flip with spoon or spatula.

Three different upside down puff pastry ideas cooked either on an outdoor griddle or in the oven.

Ingredients

  • Ricotta and Mushroom Upside Down Puff Pastry
  • 1 pkg Puff pastry sheets

  • 3 cups Sliced mushrooms

  • 1 tomato sliced

  • 1 small onion sliced

  • garlic powder

  • 1 egg (beaten) with 1 Tbs water

  • olive oil

  • basil (fresh or dry)

  • salt and pepper

  • 8 oz Ricotta. Mix in 1 Tbs of minced garlic and 1 Tbs of parsley. This will be enough ricotta for both puff pastries using ricotta.

  • Ricotta, Onion and Tomato Upside Down Puff Pastry
  • 1 pkg Puff pastry sheets

  • 8 oz ricotta

  • 1 small onion sliced

  • 1 tomato sliced

  • garlic powder

  • Olive oil

  • balsamic oil

  • 1 egg (beaten) with 1 Tbs water

  • salt, black pepper

  • garlic powder

  • Jalapeño, Onion, Bacon and Hot Honey Upside Down Puff Pastry
  • 1 pkg Puff pastry sheets

  • 2 Jalapeños seeded and sliced

  • 2-3 slices cooked and crumbled bacon or pkg of pancetta

  • 1 small onion sliced

  • Pecorino Romano

  • Shredded cheddar cheese

  • Salt, pepper

  • 1 Egg ( beaten) with a Tbs of water

  • garlic powder

  • Mike’s hot honey

Directions

  • Follow box directions on how to thaw puff pastry. Once thawed and unfolded, stretch dough slightly with a rolling pin. Cut dough into 6-9 squares. I cut mine into 9.
  • While dough is thawing, wash and slice mushrooms. Preheat a skillet and quickly sauté mushrooms until cooked. Set aside. Slice onion and tomato.
  • When dough is thawed, roll out. Spread a thin layer of ricotta mixture over rolled out puff pastry.
  • If using oven, preheat to 375 F. As a great Summer option, try grilling the puff pastry. Preheat grill to 375 degrees. Heat grill on low where you will be placing the pastries. Leave one zone of grill vacant and turn to high to reach desired temperature. We set up our removable grill griddle with a layer of parchment paper. If you are using your indoor oven, do the same with a sheet pan.
  • Spaced out on your parchment on a cool pan, drizzle a small dollop of olive oil times the amount of puff pastry squares that fit. Over the top of each dollop, sprinkle some salt, black pepper and basil.
  • Top with a sliced onion, spoonful of sautéed mushrooms and sliced tomato. Place puff pastry square with ricotta over the tops of each mound. Lightly press edges of square down with fingers or a fork. Evenly brush the puff pastry with the egg wash. Sprinkle tops with garlic powder.
  • Place griddle on your preheated outdoor grill. Cover and cook for approximately 15-20 minutes or until puff pastry is golden brown. The same time will apply if using your oven. Using a spoon or small spatula, gently place under each pastry and flip each one over. You should be left with a beautifully caramelized pastry. Move to a serving plate. Enjoy.
  • Ricotta, Onion and Tomato Instructions
  • Puff pastry directions will be the same as first step above. Continue to steps 3 and 4 above.
  • Spaced out on your parchment, drizzle a dollop of olive oil times the amount of puff pastries squares that fit. Add a drizzle of balsamic over olive oil. Sprinkle with salt and black pepper. Top with a slice of onion and tomato. Place puff pastry with ricotta square over each mound. Lightly press edges of square down using your finger or a fork. Evenly brush puff pastry squares with egg wash. Sprinkle garlic powder over the tops. Refer to Step 7 above for cooking directions. Enjoy!
  • Jalapeño, Onion, Bacon and Hot Honey Upside Down Puff Pastry
  • Puff pastry directions will be the same as first step above. Continue to steps 3 and 4 above.
  • Spaced out on your parchment paper, drizzle some hot honey times the amount of puff pastries that fit on your griddle or sheet pan. Add 3-4 slices of jalapeño and an onion slice. Top with a sprinkle of Pecorino Romano, crumbled bacon and shredded cheddar cheese. Top with pastry squares. Lightly press edges with your finger or a fork. Evenly brush puff pastry squares with egg wash. Sprinkle garlic powder over the tops. Refer to Step 7 above for cooking directions. However, this one you may want to check a couple of minutes earlier than the 15 minute mark as the honey does crisp up on the outdoor griddle.
