Is White Chicken Chili Keto Friendly?

The white beans are healthy, loaded with protein, low in fat and high in vitamins and minerals. They also include carbs and would use up most if not all of your daily carb allotment in a keto diet. For that reason, this dish may not be considered keto friendly. An option is to substitute the white beans for a lower carb variety. That swap will alter the dish’s flavor profile.

White Chili-Chicken, Turkey or No Meat?

Why use rotiserie chicken? It adds flavor to the dish. There is no cooking required so it speeds up the cook time. If you are organized, this recipe can be on the table in 30 minutes.

Turkey is another option that many consider using. In our opinion, the taste of leftover turkey is a bit gamey. The result is that it dominates the flavor of the dish. We don’t recommend this, unless you have a ton of leftover turkey you are looking for a way to use. Ground turkey or chicken is another option. Ground turkey doesn’t possess the gaminess of leftover bird. Ground chicken or turkey can work, however, we prefer the texture and flavor of a rotisserie chicken. Lastly, this chicken is already cooked and therefore only needs to be heated up, thereby saving cooking time.

Rotiserie chickens can be purchased at almost any supermarket market or warehouse. Another option is making them at home using a rotisserie oven (follow link to shop a wide variety of rotisserie ovens). This can be delicious, however this option would take a bit of time. If you are set on homemade chicken for a weeknight meal, we suggest making the chicken ahead of time. The option we choose is going with simplicity. Simply purchase a bird from the market. Many store bought varieties are very good.

Some of our readers may ask, are there legit vegetarian options? We are not big fans of plant based meats, however, we know many of you are. If you like these, go right ahead and substitute your favorite plant based option for the meat to create a vegetarian white chili.

White Chili- Canned Beans or Dried White Beans?

Dried beans can be used, however, doing so increases the cook time from 30 minutes to a few hours, not including an overnight soak of the beans to lessen cook time. This recipe uses canned white beans to simplify preparation and substantially lessen cook time. We suggest using a good quality canned bean, such as Goya.

Can I Make White Chicken Chili in a Crockpot?

This dish can be made in a crockpot, however, a slow cooker will require a few hours of cook time. If you desire to use a slow cooker, we suggest placing all the ingredients in the bowl of the crockpot the night before and refrigerating. Before work, set up an outlet on your countertop with a timer and set up the crockpot with the refrigerated ingredients and set the timer to start 4 hours before your dinner time.

The chicken could become over cooked using this method if it cooks too long, so you may want to try adding the chicken when u get home. Then, turn the slow cooker to high and warm it all up. We have found these small appliances to be interchangeable, so shop for one that fits you needs for size and fashion.

Can I use Salsa in White Chicken Chili

Yes, however we suggest using a salsa verde with this recipe. A salsa roja will substantially modify the aesthetics and flavor of the dish.

What are the Ingredients for White Chili?

How do I make this White Chicken Chili Recipe?

To save valuable time and get dinner prepared in thirty minutes, we recommend shredding and curing up the rotisserie chicken then night before. Cut it into bite sized pieces and place it in a stainless steel bowl or ziplock bag. If you have the time, add some lime juice, chili powder, cumin and oregano to the chicken, mix it and place it in the fridge until you need it the next day.

When you are ready to cook, remove the chicken from the fridge. Dice the onion, garlic, peppers and cilantro with a sharp kitchen knife.

Heat a Dutch oven or other adequately sized pot with olive oil to medium heat. We love using our Amazon Basics cast iron 7 quart Dutch oven. It works and looks great, at a fraction of the cost of name brand cookware.

When the pot is hot, sweat the onion, garlic and peppers. Stir and lower heat if the pan is too hot. Continue for 3-5 minutes or until the onions are translucent. Turn the heat to high and add the broth, salsa verde and cilantro. When it begins to boil add the beans and lower to a strong simmer.

Add chili powder, cumin and oregano. Let simmer for 15 minutes, or until beans are tender. To thicken, you have two options. Either use an immersion blender(shop hand blender here or in equipment section) for a quick 1-2 second pulse, or remove 1 cup of beans and crush them and return them to the pot. If the beans are tender, add the chicken and turn up heat to high. Otherwise, let beans cook an additional five minutes before adding the chicken. Reduce heat when the chili begins to boil to a strong simmer. When chicken is hot, remove and serve immediately.

What to Serve with White Chicken Chili?

Just like with regular chili, have some toppings for the table. Options include cheese, cheddar or a Mexican cheese such as cheap fresco or Oaxaca are suggested. Diced up red onion and jalapeños are toppings that go well with this dish. Lastly, some hot sauce, a green salsa verde or jalapeño hot sauce is suggested. As a side, consider corn bread or maybe an onion quiche. If you have a larger crowd to feed, chicken tacos or quesadillas go great with this chili. Recipes for these are featured below.

White chicken chili is a hearty, healthy and satisfying chili the whole family will love.

Ingredients

  • 1 Large onion, diced

  • 3 Cloves garlic, minced

  • 2 Jalapeño chili pepper, or Serrano if you prefer spicier. OPTION: use pickled jalapeños from a can or jar.

  • 1/4 Cup chopped cilantro

  • 2 15 oz canned white beans such as cannellini or navy

  • 8 cups chicken broth.

  • 1/2 cup salsa verde

  • 4 tsp chili powder

  • 1/4 tsp cumin

  • 1 1/4 tsp oregano dried

  • salt, pepper to taste

  • Rotisserie Chicken Marinade
  • 1 rotisserie chicken cut into bite sized chunks or shredded

  • 1 lime, juiced

  • 1 Tbs chili powder

  • 1/2 Tsp cumin

  • 1 Tsp oregano

  • 1/8 Cup chopped cilantro

  • Toppings (Optional)
  • grated cheddar or your favorite Mexican cheese

  • red onion, chopped

  • chili peppers such as jalapeño, serrano or poblano chopped.

  • chopped avocado

Directions

  • Cut up the rotisserie chicken. To save time, do this the night before and refrigerate. OPTIONAL: For added flavor mix 1 tbs of chili powder, 1/2 tsp cumin, 1/8 cup cilantro and juice of a lime with the chicken and let it sit overnight.
  • Cut up onion, garlic and chili peppers. Heat heavy pan, such as a cast iron Dutch oven to medium. Add 2 tbs olive oil. Once hot, add onions, garlic and chili peppers. Adjust heat so they do not burn. Let these sweat and soften for about 5 minutes.
  • Add chicken broth, salsa verde and cilantro. Turn up heat. When liquid begins to boil add canned beans and reduce heat to a hard simmer.
  • Add chili powder, cumin and oregano. Let simmer for 15 minutes. Taste beans. If still hard, cook an additional 5 minutes. Once the beans are soft, remove 1 cup of the beans. Using an immersion blender, blend and return the crushed beans to the chili. This can also be done in a blender or using the back of a fork to crush. This will thicken the chili. Now add the chicken and turn up the heat to allow chili to return to a boil. Reduce heat again and heat until chicken is hot. Remove from heat and serve immediately with toppings of your choice.
