Can pizza dough be frozen?

We have not had a good experience freezing dough or purchasing frozen dough. The texture is never the same as it doesn’t rise properly. This is likely due to the yeasts reaction to freezing. There are many articles out there on freezing pizza dough. With our 90 minute pizza dough recipe we don’t feel playing around with frozen dough is worth the effort. You can let this dough sit in your refrigerator for a week. Just be certain to cover tightly so the dough doesn’t dry out.

You now have the dough and are well on your way to making homemade pizza. Your homemade pizza will be delicious and also much healthier.

Why is homemade pizza healthier?

The simple answer is that you control all the ingredients going into your pizza. How many times have you had a delicious pizza that has oil running off the slice as you eat it. That oil is either added or is from a less than high quality mozzarella. Our homemade pizza never is oily or greasy unless we add a topping such as sausage that we know will add fat to the dish.

We wanted a healthy pizza so used spinach as a topping. But our crust was not crunchy?

Why is the crust on my pizza soggy?

A soggy crust is caused by one of two things. First, your pan isn’t a pizza quality pan. The only way to a crunchy pizza is to use a good quality pizza pan. We have seen pans called pizza pans that yield a soft crust devoid of crunch. The second is your choice of toppings. Certain vegetables such as spinach or broccoli can hold a lot of water that would be released while cooking if not drained properly. Ricotta can also be the culprit if the cheese is soft or watery.

We have a healthy and delicious topping, and a solid crust. But what about the tomato sauce?

How do I make pizza sauce?

Use a good quality tomato sauce and minimize what you add. Garlic, onion some basil and salt and pepper. The sauce only needs to simmer 15-20 minutes. Follow our recipe below.

Is making a pizza from scratch easy?

Yes, and you do not have to own a special pizza oven. After you learn our recipe you will make pizza every month if not more often.

Can I make pizza in my conventional oven?

Absolutely. Most coventional ovens go up to 500F. If you have a good pizza pan you will get a quality pizza with crunchy crust in your kitchen oven.

Notes

  • We use a square or rectangular pizza pan. The pan is very important. Our pan is ancient and was purchased from a small shop in NYC’s little Italy neighborhood. We have heard Lloyd makes a good pan.
