Devoid of the traditional carbs added to most soups, this dish is loaded with cabbage and nutritious vegetables, while the kielbasa provides a delicious, smokey goodness. This hearty soup can be served as a nutritious single dish meal. To add an additional level of flavor, try adding a splash of your favorite mustard to your plate. We suggest trying a European variety of mustard such as Kremzska Horcice that you can find at a well stocked supermarket, a European grocery, deli or online. However, any mustard will work.

Is Low Carb Kielbasa and Cabbage Soup Easy to Make?

This recipe is low calorie and includes a belly full of a superfood. It also fits into the meals in 30 minutes category!

To make, brown the kilebasa and set aside. Then add the cabbage, onions, celery, carrots and garlic. Sauté these and let them soften up. Now return the kielbasa to the pot with the chicken stock and add the seasonings. Bring to a boil and simmer for about five minutes. Enjoy!

Low carbs, low calories and loaded with flavor. Cabbage and kielbasa soup is a hearty and healthy meal loaded with flavor!

Ingredients

  • 2 Tbs olive oil

  • 1 large onion diced

  • 1/2 head red cabbage diced

  • 2 stalks celery, diced

  • 2 large carrots diced

  • 3 cloves of garlic minced

  • 1 pkg smoked turkey kielbasa cut into rounds

  • 1/2 tsp salt

  • 1 tsp black pepper

  • 1 tsp smoked paprika

  • 2 tsp paprika

  • 1 Tbs oregano

  • 1 bay leaf

  • 6 cups chicken stock

  • Dollop of your favorite mustard (optional)

Directions

  • In a large stock pot, heat 1 Tbs olive oil. Add sliced kielbasa and cook until lightly browned. Remove from pot and set aside.
  • Heat 1 Tbs of olive oil in same pot and add in onion, diced cabbage, celery and carrots. Saute for about 1 1/2 minutes before adding minced garlic. Continue cooking until onion is browned and vegetables are softened.
  • Add keilbasa back to the pot. Season with salt, pepper, smoked paprika, paprika and oregano. Mix together.
  • Stir in chicken stock and bay leaf. Bring to a boil. Allow to reduce for about 5-10 minutes. Do not overcook.
  • Serve immediately.

Notes

  • Add diced potatoes to the dish for a heartier meal.
