The Mexican torta prepared with seasoned pollo asada, refried beans, guacamole and fresh produce is a prized yet under appreciated sandwich. If you are familiar with this classic, you already know. For those of our readers that aren’t familiar with this delicious meal, this is a must try recipe. But first, what are its origins?
Who invented the torta?
Created in Mexico during the late 1800’s, the name is a bit odd as it translates to cake or pie in Spanish. However in Mexico, it translates to sandwich. This hand held creation is a bit different than what is usually associated with this cuisine. The explanation is the presence of European influences, most notably the French. The French influence is present in the bread used possessing strong similarities to the baguette.
There is a lot of information with regard to the history of this bold and fresh meal. We can only include a quick discussion of its origins on our recipe blog. For those interested, the following links provide a solid description of its origins and an interesting story as to its creation.
How to make a torta.
It starts with seasoned meat. Beef, pork or chicken are commonly used. Our recipe uses a rotisserie chicken that we marinade for added flavor. Why? These chickens are always moist, it saves time and the quick marinade adds a level of bold flavor to this protein.
Refried beans are spread on the base of the bread. We prefer fat free to avoid the extra fat, or lard often added to many refried beans. Another option is to make your own. We plan to add a recipe to our blog for a bean dip that can be substituted. We also season the refried beans and add some diced jalapeño. As for what cheese to use, sharp cheddar is a solid choice, although any Mexi-cheese will work.
Many include sliced avocado, we prefer our homemade guacamole. Try the homemade guac, it’s fantastic and simple. Fresh tomato and lettuce can be added to complete this super stuffed and healthy sandwich.
Is the torta healthy?
Our version is. Chicken is a low fat protein. Using no fat refried beans keeps this ingredient healthy except for some salt. Making your own refried beans or bean dip allows you to control the amount of salt if this is a dietary concern of yours. The guacamole is mostly avocado, a well known heart healthy food loaded with healthy fats and nutrients. The remainder of the sandwich is produce and cheese. We suggest ripping excess dough out of the bread to reduce carbs and fit more filling.
