How to make our Naan pizza with fresh garden vegetables

We all love pizza but know that takeout or frozen pizza is loaded with fat and calories. What if you could enjoy pizza without the guilt? Our quick and easy pizza is made with garden fresh banana peppers and cherry tomatoes. The result is a delicious and guilt free pizza you can prepare traditionally in the oven or on the grill.

Naan flatbread creates a delicious base removing the need to make pizza dough. We do make our own dough (which we will share in a future post) however, this recipe allows you to have a delicious and healthy dinner on the table in 30-45 minutes. The dish can be made year round, but when in season we strongly suggest using garden fresh produce) from your garden or local farmers market to elevate this dish to another level. Naan Pizza with Garden Fresh Banana Peppers and Cherry Tomatoes

A quick and easy meal or side dish that is light and loaded with flavor. Using garden fresh or in season produce from a local farmers market will add to the flavor of this dish.

Ingredients

  • 6 Naan flatbreads

  • 1 pint cherry tomatoes halved

  • 3 cloves of garlic minced

  • 10 fresh basil leaves sliced

  • 2 banana peppers thinly sliced

  • 8 oz pkg of part-skim shredded mozzerella

  • Pecorino Romano to taste

  • Pinch of salt and black pepper

  • Oregano

Directions

  • In a medium bowl, add halved cherry tomatoes, minced garlic and sliced basil. For the basil, I like to stack the leaves together, roll the stack lengthwise and slice. Add the pinch of salt and black pepper. Mix ingredients together.
  • Place Naan flatbreads on a nonstick, flat baking pan. For an easier clean-up, you can line the pan with parchment paper before adding the Naan. Add the cherry tomato mixture evenly to each Naan. Sprinkle each with shredded mozzarella. Add thinly sliced banana peppers.
  • Sprinkle each Naan with a little pecorino romano cheese and oregano.
  • Place nonstick pan in a 400 degree oven for 15 minutes or until cheese is melted and Naan is lightly browned.

Notes

  • This will serve more than 2 if used as a side dish.
  • Add a prepared protein such as chicken or shrimp to make this dish a bit heartier.
  • It is very important to slice the banana peppers thin as they are placed on the pizza uncooked.
  • If you cannot locate naan flat bread, pita bread is a good substitute.
