Ricotta cookies have been a staple in our home for years. Somehow they seem to disappear overnite. This Christmas cookie recipe was handed down by a friend and added to our holiday baking repertoire. This is a simple yet delectable cookie with a distinct flavor and a “Christmas-ey” look that has become part of our family tradition.

After a holiday feast, these light as snow ricotta cookies will feel like a Christmas miracle for your taste buds. After a single bite one will seccumb to fluffy ricotta pillows with a hint of vanilla adding complexity to the taste, then a coating of sweetness completes the journey. Each bite is a melt-in-your-mouth revelation, perfect for cleansing the palate after a rich feast.

Building Holiday Traditions

Many don’t bake as they consider it a chore. Baking cookies for the holidays was a tradition we enjoyed with our parents and one that we shared with our children. We always dedicated a weekend to bake cookies with the kids. This activity made cookie weekend a family activity that everyone enjoyed, hardly a chore.

To keep it fun for all, it is important to have the kids as active participants. Let them pick their favorite cookie that they can make. It’s ok if they pick a chocolate covered Oreo, it is their cookie,and they will enjoy the cookie and telling all your guests that this was their idea. Let them decorate the cookies, even if they don’t do a great job. What is the origins of ricotta cookies?

These cookies possess a Sicilian heritage and are not traditionally a holiday cookie. However we adopted them as part of our annual holiday cookie tradition. The cookies are also traditionally made with a citrusy flavor, lemon or orange zest. Our version substitues vanilla for the citrus. That is our preference, you are free to modify the recipe to your liking.

Ricottta cookies are a soft, simple and delicious cookie perfect for the Christmas holiday.

Ingredients

  • 2 cups all purpose flour

  • 1 large egg

  • 1 cup sugar

  • 1 tsp vanilla

  • 1/2 tsp baking soda

  • 1/4 pound butter (1/2 stick)

  • 1/4 cup ricotta

  • For Glaze:

  • 1 can store bought vanilla icing

  • Red and green food coloring

Directions

  • Soften butter. When soft, mix with ricotta until creamy.
  • Add vanilla and sugar (gradually) to the butter and ricotta mixture while mixing. Add egg and mix well.
  • Drop onto pan (1 tsp) and bake at 350 for 10 minutes.
  • For the glaze, place 1/3 cup of vanilla icing (1 for red and 1 for green) into separate bowls. Microwave for about 10 seconds until soft. Mix in the a few drops of food coloring until you get the color you desire. Place and spread a dollop of icing onto each cookie.
