Homemade salsa verde has a tart, sweet and spicy flavor that complements most Mexican dishes and meats prepared on the grill.

Ingredients

  • 10 Tomatillos

  • 2 Jalapeño, Serrano or chili peppers of choice

  • 1/2 Small onion

  • 2 Cloves Garlic

  • 1/4 Cup Chopped cilantro

  • 2 Tbs Lime juice or white vinegar

  • 1 Tsp Brown sugar

  • 2 Tbs Oregano

  • Salt and pepper to taste

Directions

  • Clean tomatillos and chili peppers. Heat grill to high and add the tomatillos, peppers and onion to grill. Once blackened and skin splits, turn them over. When blackened again, remove from heat and let cool. This can also be done under a broiler or sautéed on pan in your kitchen.
  • Once tomatillos are cool enough to be handled, cut into halves or quarters. Any excess water left behind while tomatillos were cooling should be discarded. Place tomatillos in food processor. Cut pepper open and seed them. Cut into small pieces and place in food processor. Cut onion and garlic into small pieces and place in processor. Place remaining ingredients into food processor.
  • Close lid to food processor and pulse until desired consistency is reached. Taste for seasoning. Add salt and pepper to taste. If you prefer a smooth salsa, use a blender instead of food processor .
  • Place in glass bowl and enjoy immediately or refrigerate for at least one week.
