Sheet pan gnocchi with caramelized vegetables is a healthy weeknight meal that is loaded with vegetables that are rich in minerals and vitamins. It can also be prepared in under an hour! Cut the veggies the night before to further reduce preparation time. Baking or roasting the dish allows the produce to become caramelized and the gnocchi to become a bit crunchy for a magnificent texture and flavor.

This recipe is extremely flexible. Feel free to mix and match produce with what is in season, to suit what you like, or what is in the refrigerator that week. The choice of cheese is also left to your discretion. Want to eliminate flour, why not try substituting cauliflower gnocchi for the traditional? Want to add a protein? Using your favorite chicken sausage will keep the dish low in fat. Family loves spice? Substitute your favorite chili pepper.

What do I serve with Sheet pan gnocchi?

A side of Parmesan or Pecorino Romano cheese to top your plate, and that’s it. Some crunchy Italian bread would work but really isn’t necessary. Sheet pan gnocchi is the epitome of the one pan meal, and will become a permanent fixture to your simple and healthy weeknight meal repertoire. Bonus tip, line your pan with parchment paper for an easier cleanup!

How do I Make Sheetpan Gnocchi?

After making this once or twice, you won’t need the recipe card anymore. That’s how simple this is.

Start by preheating the oven to 425F. Place parchment paper on you 13×9 inch pan. This will make post meal cleanup a snap. Place gnocchi on the parchment paper, followed by the vegetables. Feel free to vary from the vegetables we list below to whatever you prefer or is in season. Sprinkle Italian seasonings and olive oil. Place into the oven and cook for 20 minutes.

Remove from oven and flip the veggies. Cover with cheese and return to oven for another 15-20 minutes. Broil quickly if you would like a bit of a crunch. Enjoy!

A super healthy one pan meal full of colorful vegetables and flavor!

Ingredients

  • Package gnocchi (16 oz)

  • 1/2 red and green pepper chopped into 1 inch squares

  • Half a cauliflower. Stems removed and chopped

  • 1 1/2 Cups broccoli flowerettes

  • 1/2 pint grape tomatoes

  • 1 small red onion cut into chunks

  • 6 -8 cloves garlic. If large cut in half

  • 1 small zucchini sliced and quartered

  • 10 baby carrots, or. Regular carrot cut into 2 inch pieces.

  • Olive oil

  • 1 tbs oregano

  • Salt and pepper to taste

  • 1 tbs dried basil

  • 1/4 cup grated pecorino romano

  • 1/2 cup shredded mozzerella (or your favorite cheese)

Directions

  • Preheat oven to 425 degrees
  • Line a large baking sheet with parchment paper (if you don’t have parchment paper use non stick spray).
  • Place gnocchi and vegetables in pan. If you have more vegetables than fit in the pan either place on another sheet pan or just save for another time. Sometimes we go a little overboard with veggies.
  • Drizzle with olive oil, Italian seasonings, salt and pepper.
  • Bake for 20 minutes. Remove from oven and flip vegetables and gnocchi. Top with cheese and return to oven for another 15 – 20 minutes until cheese melts and vegetables begin to carmalize.
  • If you prefer more of a crunch, broil for a few minutes until you get the result you desire.

Notes

  • Feel free to experiment with other vegetables. Common substitutions include asparagus, scallions, eggplant, chili peppers or mushrooms. Whatever vegetable you prefer can substitute into this dish.
  • You can add a protein to this dish. Chicken, shrimp, sausage, salmon, tofu or your favorite protein can be added.
  • The choice of cheese is left to the preparer. We have substituted smoked Gouda, Manchego, fontina, pepper jack or any cheese that melts well will work.
