To prepare for a skillet, simply cut the chicken and brown in a hot pan. While browning chicken, cut up the vegetables. Remove chicken when browned and sauté vegetables quickly. Return chicken to pan, add corn, tomatoes, black beans and seasoning. When well combined and vegetables soften, top with cheese and cover. Once cheese is melted serve in your preferred manner.
If you prefer a baked casserole or crockpot, the preparation remains the same, however, you must adjust your cooking method. For a casserole add everything to a casserole dish and bake at 375F for 30-40 minutes or until done. Cover with cheese and broil until cheese melts.
For a crockpot, prepare the same and add all ingredients to crockpot. Cook on high 3-4 hours or until done. When you serve, top with cheese.
The vegetables and cheese used can be modified to whatever you like or prefer. Substituting a poblano pepper for the sweet green peppers will give the dish a magnificent earthy and complex flavor.
