Is tortellini good for you?

We all know that pasta is carb intensive. However when made in a soup, you will eat less of it. If carbs are not a major concern for you, pasta or tortellini can be part of a well rounded diet. When combined with vegetables in a soup, you may even be able to coax the kids to eat something green!

Who invented tortellini?

The origins of this unique pasta dates back to the 1500’s in Bologna. Legend has it that Venus the goddess of love stayed at a local inn within Bologna. The local innkeeper spied upon his guest and viewed her in a state of partial undress. Upon seeing her, he became so enamored he immediately created a pasta in the image of her navel.

How do I make tortellini soup?

Traditionally, these pasta are made with a clear, or chicken stock broth. This dish can also be prepared this way, simply substitute chicken broth for the tomato sauce in the below recipe. We have enjoyed it this way, but the family preferred the dish with the tomato sauce base.

The simplicity and flavor of this dish will make it a favorite of the cook and family. Simply start by sautéing onions and garlic in an 8 quart pot then add your choice of sausage. We prefer chicken or turkey sausage to reduce the fat content of the dish. Sauté until sausage begins to brown. Add stock, tomato sauce and seasonings. When heated, add broccoli and pasta.

Be aware that tortellini cook extremely quickly. The dish will be done within five minutes! Depending on how you prefer your broccoli, adjust when it is added. If you prefer a softer texture, add before pasta is added. The broccoli should be firm but not soft if you follow our timeline.

Tortellini and Broccoli Soup

Quick to make and delicious year round. This tortellini and broccoli soup is filling all on its own. Add grilled cheese or a salad, however, if you are looking for a little something more.

Ingredients

  • 1 medium onion diced

  • 2 cloves garlic minced

  • 2 links chicken or turkey sausage sliced

  • 1-2 Tbs Olive oil

  • 1 1/2 Tbs dry basil

  • salt and black pepper to taste

  • 5 cups frozen tortellini

  • 4-5 cups cut broccoli florets. I do not use the stems

  • 32 oz low sodium chicken stock

  • 28 oz can of crushed tomatoes

  • (optional toppings) red pepper flakes, Pecorino Romano

Directions

  • Heat olive oil in a large pot on medium high heat. Add onions and sauté for 30 seconds before adding garlic. Sauté until onions are translucent and garlic is fragrant. Push the onions and garlic to the outside of the pot and add the sliced sausage. Cook just until slightly browned.
  • Add chicken stock, canned crushed tomatoes, salt, pepper and basil. Stir to combine. Bring to a boil then reduce heat and let simmer for 15-20 minutes covered.
  • Remove cover. Add broccoli. Cook for a minute or two. Depending on how you like your broccoli, you can cook it a little longer or shorter before adding the tortellini. We like it with a little crunch still so we cook it for about a minute. Add the tortellini and cook until tortellini start to float to the top, about 5 minutes. When served, top with red pepper flakes and Romano cheese. Enjoy!

Notes

  • This soup can also be made with spinach. We have used both. It all depends on what we have in the fridge at the time.
  • If using Italian pork sausage, remove the meat from the casing. Brown and break apart as it cooks.
