a simple Asian dumpling soup made with your favorite TJ’s dumplings.

Ingredients

  • 1 Clove garlic, use 2 if small

  • 1 Tbs fresh ginger, diced fine

  • 1 Medium onion, sliced

  • 2 Medium carrots, cut into matchsticks

  • 4 Oz mushrooms, sliced

  • 6 Cups chicken broth

  • 1 Tbs light soy sauce

  • 1 Tbs chili garlic sauce

  • 3 baby bok choy, sliced into long bands

  • 1 Package Trader Joe’s dumplings

  • 1 Tbs avocado oil

  • 1 Tsp sesame oil

  • Thai dumpling soup
  • 1/2 red pepper slice into bite sized pieces and sauté with vegies above

  • 1 Tsp fish sauce

  • 15 Oz coconut milk

  • 1 Thai chili pepper (optional)

Directions

  • heat avocado oil in a Dutch oven style pot. Add onion, garlic and ginger and sauté for a minute.
  • add carrots and mushrooms ( and rd pepper if making Thai). Simmer for at medium heat 5 minutes.
  • as carrots begin to soften add the liquids (broth, soy sauce and chili garlic saue, if making Thai, add fish sauce) Bring to a soft boil, reduce heat and Simmer 10 minutes.
  • Raise heat to medium high and add bok Choi and dumplings ( if making Thai, add coconut milk). Bring to a slow boil. Cook as per dumpling directions (about 7 minutes). When dumplings are cooked, the soup is ready to serve.

Notes

  • don’t have bok Choi, substitute any other leafy green such as spinach or kale.
  • easily transform this recipe into a spicy and creamy THAI dumpling soup, just add the additional ingredients listed above.
