Looking to feed a crowd? Well look no further! Uncle Giuseppe’s sausage and peppers recipe is a simple way to feed a crowd. Loaded with sausage and colorful peppers, this popular Italian dish never disappoints!

Sausage and peppers made with fresh Italian sausage, peppers and onions is a satisfying and popular street food with an aroma that makes your mouth water like Pavlov’s dog. This Italian American classic is loved at Italian deli’s, pizzerias and Italian street fairs. The sandwich is one of the more popular choices at Yankee stadium. Kudos to the strong-willed people who can pass a vendor selling this hero and not purchase one!

But why wait for these occasions? Most people don’t realize how simple this is to make at home. Our sausage and peppers recipe will permit all to enjoy this favorite at home or with family and friends!

Where did sausage and peppers originate?

Similar to many favorites at Italian restaurants in the USA, this dish is not a traditional Italian dish but was created by Italian American immigrants in the early 1920’s. Peppers were not found or common in Italy until discovery of the new world. Therefore, you will not see peppers in most traditional dishes in Italy.  This changed when Italians immigrated to the USA and the rest is history

How do you eat sausage and peppers?

That depends on your personal preference. I have seen this dish served with pasta, potatoes or rice. The traditional way it is served at fairs and sporting events is as a sandwich on a hero or hoagie roll. Many leave the sausage link whole when making this as a sandwich.

Is sausage and peppers served with or without tomato?

The answer is personal preference. For us, it depends on our mood.  We change it up, preparing  the dish with or without tomatoes. Whatever suits us that day. I will say, we get more compliments when it is prepared with tomato sauce. We use a very limited amount of sauce, 8 ounces for 4 pounds of sausage.  We also have used fresh plum tomatoes in place of sauce, especially during summer harvest season.

Are sausage and peppers healthy?

The traditional recipe uses pork sausage that is loaded with fat, cholesterol and salt. When made with pork sausage, this dish is not one to be considered healthy and should be avoided if you are watching your calorie intake. 

The dish can be made healthier. Consider substituting turkey sausage for pork and you will substantially reduce the fat and calorie content of the dish. The substitution will definitely impact the flavor. However, we have found some turkey sausages that are very good. If you are incentivized, try a few different sources or brands of turkey sausage and find one you like. The quality of turkey sausages have improved tremendously over the years and present a decent healthy alternative.

Does sausage and peppers contain gluten?

If your are not concerned with calories and fat intake and your concern is gluten, the dish is gluten free. It’s traditional accompaniments such as pasta and bread would add gluten to the dish. 

Are sausage and peppers a good option to feed a crowd or party?

Absolutely. The dish when made at home is simple to make, inexpensive and easily scalable. We can’t think of many dishes better suited to satisfy a big crowd.

Sausage and peppers recipe for 50

With a party of this size we assume you will have other options besides this.  We suggest doubling this recipe for a crowd of 50 and preparing some Sicilian baked ziti. A large party hero is another popular option. We also like to mix it up and add some Mexican or Puerto Rican food to our party spreads and cater some Chinese! We like a good smorgasbord lol.

Can I bake sausage and peppers in the oven?

Yes, this manner of preparing this dish works fine. However, we find cooking the sausages on the grill adds a nice pop of flavor. The dish also cooks much quicker on the grill. Another good option is using a crockpot or cast iron skillet. The skillet would be for a much smaller amount of sausage. 

Our sausage and peppers recipe

Sausage and peppers is one of the easiest recipes we will ever share. Combined with its amazing flavor and scalability this is a terrific dish to feed a crowd. 

Place good quality sausages on grill and cook on medium heat. Keep an eye for flare ups and be certain not to overcook. While the sausage is cooking, if you have the grill space, place peppers and onion on the grill. The skin of the  peppers should blacken, but be careful to not burn the flesh. Grill time should take about 15 -20 minutes. Remove from grill and allow to cool.

When cool, slice the sausages. The burnt skin of the peppers can be removed if desired. We often leave the blackened skin on. Slice the onion and chop garlic. Add half the sliced sausage to the pan, top with half of the remaining ingredients. Mix and repeat. Combine all ingredients and enjoy.

This dish can be made a day or two ahead of time if you are planning to serve at a party. Simply remove from refrigerator and heat in oven or on the grill.

This popular sausage and peppers Italian dish is flavorful, colorful and hearty.

Ingredients

  • 4 lbs quality Italian sausage (sweet, spicy or a mix)

  • 4 Peppers, assorted colors (green, red, orange and yellow)

  • 1 medium onion

  • 3 cloves garlic minced

  • 8 oz tomato sauce

  • 1 tsp oregano

  • 2 shakes black pepper

  • 8 leaves fresh basil sliced

  • 1 aluminum tray ( half size)

Directions

  • Preheat grill. Grill sausages, turning occasionally, for approximately 15 minutes on medium heat. Watch for flare ups and do not overcook. When done, remove and let cool.
  • Cut onion in half. Place peppers and halved onion on the grill and blacken the skins. Remove from grill and let cool.
  • Slice sausages. Seed blackened peppers and cut into approximately 1 inch by 1 inch pieces. If you prefer, you may remove the blackened skins from the peppers before slicing. Slice the onion.
  • Add half the sausages to the pan. Then add half the peppers, onions, garlic and tomato sauce. Repeat. Top with oregano, black pepper and basil either torn or rolled and sliced. Stir to combine all ingredients. This can be made ahead of time and warmed up when you are ready to serve. Enjoy!

Notes

  • The quality of the sausages is very important. Most supermarket sausages are not of acceptable quality and will not yield a good result. We use sausages from a good Italian pork store, or Premio Italian sausages found at Costco warehouses and some supermarkets.
