Can I use fresh pumpkin to make this recipe?

Yes you can. We have tried making homemade purée and our opinion is that it just isn’t worth the effort. This may be one of the only times we will recommend using a canned product over fresh. However if you would like to try making your own, here are some resources to do so.

How to make chocolate chip pumpkin loaf

This simple baking recipe requires a bit of oven time, but the result is well worth the wait. To get started, gather all of your ingredients. Next, combine the dry ingredients in a medium bowl. In a separate large bowl, cream the butter until smooth. Add the sugar and beat for a few minutes until light and fluffy. Beat in the eggs one at a time, incorporating each fully before adding the next.

Gradually add the dry ingredients, alternating with the pumpkin puree, and mix until just combined. Have a picky eater who wont eat nuts, or someone with a nut allergy? Just delete the walnuts. We use to do this as we had a picky eater early on and the loaf is still great. Finally, stir in the chocolate chips.

Pour the batter into two greased loaf pans and bake at 350°F for 55 minutes. Insert a toothpick into the center of each loaf to check for doneness. If the toothpick comes out with moist crumbs, continue baking for 5-10 minutes more. Once done, remove the loaves from the oven and let them cool in the pans for a few minutes before transferring them to a wire rack to cool completely.

Can I make these as muffins?

Yes you can. Simply place batter into a muffin tray and reduce cook time. The decadence of the loaf precludes us from preparing this recipe as a muffin.

A moist and simple to prepare pumpkin spice loaf with chocolate chips and walnuts. a perfect elixir for your autumn cravings or a thanksgiving dessert.

Ingredients

  • Dry Ingredients
  • 3 1/2 Cups flour

  • 2 Tsp baking soda

  • 2 Tsp cinnamon

  • 1 Tsp nutmeg

  • 1 Tsp salt

  • 1/2 Tsp ginger

  • 1/2 Tsp cloves

  • Wet Ingredients
  • 1 Cup butter, softened

  • 2 Cups sugar

  • 4 eggs

  • 1 1/2 Cups pumpkin

  • 1 1/2 Cups chocolate chips

  • 1 Cup walnuts (optional)

Directions

  • in a medium bowl, combine the dry ingredients, flour, baking soda, cinnamon, salt, nutmeg,ginger and cloves. Set aside.
  • in a large bowl cream the butter. Add sugar and heat for 2 minutes. Beat in the eggs, one at a time. Add the dry ingredients while mixing, alternating with the pumpkin. When combined, stir in the chips and walnuts.
  • place batter evenly divided in 2 greased loaf pans. Bake at 350F for 55 minutes. Check with a toothpick to see if still moist. If still moist, cook another 5-10 minutes or until cooked.
  • when done, remove from oven and let cool. Sprinkle top with powdered sugar when ready to serve.
